I'm on a quest to get labor productivity over to a estimating tool and winning at life. I'm wondering what other ways are there to do this, as ideally I would like to see the total hours to show up in zzTakeoff too so its not so closed ended.

I’ve been working through the same thing. Still not sure if this answers your questions, I'm on my second drink :), still holydaying.
One way I see it is to separate production rates from cost, so labour is driven by hr/unit and total hours come straight from quantities.
If zzTakeoff can be used in a way where total labour hours are calculated and visible, with production rates driving it, it becomes much more flexible and easier to adjust across the estimate.
Keeping hours separate from cost really opens it up and makes it closer to real-world estimating workflows.
